Zuppa Toscana (Olive Garden Copycat)
A creamy, hearty soup loaded with beef sausage, tender potatoes, and fresh kale. Perfect for a cozy meal!
Ingredients:
Beef Sausage – 1 lb, crumbled (use halal beef sausage instead of pork sausage)
Onion – 1 large, diced
Garlic – 3 cloves, minced
Russet Potatoes – 3-4 medium, sliced into thin rounds
Chicken Broth – 6 cups
Kale – 2 cups, chopped
Heavy Cream – 1 cup
Salt and Black Pepper – to taste
Red Pepper Flakes – optional, for a little spice
Instructions:
Cook the Sausage
In a large pot, cook the crumbled beef sausage over medium heat until browned. Remove and set aside, leaving any remaining fat in the pot for added flavor.
Sauté the Onion and Garlic
Add the diced onion to the pot and sauté for about 5 minutes, or until softened. Add the minced garlic and cook for another minute, until fragrant.
Add Potatoes and Broth
Add the sliced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
Add Kale and Cream
Stir in the chopped kale and heavy cream. Simmer for an additional 5-10 minutes, until the kale is tender.
Season and Serve
Season with salt, black pepper, and red pepper flakes (if using). Ladle into bowls and enjoy warm!
