Vegetable Soup Without Meat
A light, nutritious soup made with fresh vegetables. Perfect for a healthy, satisfying meal!
Ingredients:
Cauliflower – 1 medium head, broken into florets
Carrot – 1 medium, shredded
Celery – 1/4 cup, chopped
Leek – 1 medium, cleaned and chopped
Water – 2 1/2 cups
Vegetable Bouillon Cube – 1 (or 2 tsp chicken bouillon for a non-vegetarian option)
Garlic – 2 cloves, minced (optional for extra flavor)
Fresh Parsley – chopped, for garnish
Salt and Black Pepper – to taste
Instructions:
Prepare the Vegetables
In a large pot, combine the cauliflower, shredded carrot, chopped celery, and leek.
Add Water and Bouillon
Pour in the water and add the vegetable bouillon cube (or chicken bouillon if preferred). Stir to dissolve the bouillon.
Cook the Soup
Bring the soup to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the vegetables are tender.
Season and Garnish
Add salt and black pepper to taste. Serve hot, garnished with fresh parsley.
