Ingredients:
Ground Beef – 1 lb (substitute for pork if needed)
Onion – 1 large, finely chopped
Garlic – 3 cloves, minced
Green Bell Pepper – 1, chopped
Red Bell Pepper – 1, chopped
Canned Diced Tomatoes – 1 (14 oz) can, undrained
Canned Kidney Beans – 1 (15 oz) can, drained and rinsed
Canned Black Beans – 1 (15 oz) can, drained and rinsed
Tomato Sauce – 1 (15 oz) can
Chili Powder – 2 tbsp
Ground Cumin – 1 tbsp
Paprika – 1 tbsp
Dried Oregano – 1 tsp
Salt and Black Pepper – to taste
Red Pepper Flakes – optional, for added heat
Fresh Cilantro – chopped, for garnish
Instructions:
Brown the Ground Beef
In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat, then transfer the beef to your crockpot.
Add Vegetables and Beans
Add the diced onion, minced garlic, green and red bell peppers, canned diced tomatoes, kidney beans, black beans, and tomato sauce to the crockpot.
Season the Chili
Sprinkle in the chili powder, ground cumin, paprika, oregano, salt, black pepper, and red pepper flakes (if desired). Stir well to combine all ingredients.
