Beef and Barley Soup
A comforting, hearty soup that combines tender beef, wholesome barley, and flavorful vegetables, perfect for a cozy meal.
Ingredients:
Beef Stew Meat – 1 lb, cut into bite-sized pieces
Olive Oil – 2 tbsp (for browning the beef)
Onion – 1 large, diced
Carrots – 2, sliced
Celery – 2 stalks, chopped
Garlic – 3 cloves, minced
Beef Broth – 6 cups
Tomatoes – 1 can (14.5 oz), diced
Barley – 3/4 cup, rinsed
Salt – to taste
Black Pepper – to taste
Fresh Parsley – chopped, for garnish
Instructions:
Brown the Beef
In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the beef and set aside.
Sauté the Vegetables
In the same pot, add the diced onion, carrots, celery, and garlic. Sauté for about 5 minutes or until the vegetables are softened and fragrant.
Cook the Soup
Return the beef to the pot. Add the beef broth, diced tomatoes, and barley. Stir well and bring to a boil.
Once it’s boiling, reduce the heat, cover, and simmer for 45-50 minutes, or until the beef is tender and the barley is cooked through.
Season and Garnish
Season with salt and black pepper to taste. Ladle the soup into bowls and garnish with fresh parsley.
