Ingredients:
For the Lemon Loaf:
Butter – 1/2 cup, softened
Granulated Sugar – 1 cup
Lemon Zest – from 2 lemons
Eggs – 3 large
Milk – 1/2 cup
Lemon Juice – 1/4 cup, freshly squeezed
Vanilla Extract – 1 tsp
All-Purpose Flour – 1 1/2 cups
Baking Powder – 1 tsp
Salt – 1/4 tsp
For the Lemon Glaze:
Lemon Juice – 2 tbsp, freshly squeezed
Powdered Sugar – 1 cup, sifted
Vanilla Extract – 1/2 tsp
Instructions:
Prepare the Batter
Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
In a large mixing bowl, cream the softened butter, granulated sugar, and lemon zest until light and fluffy. Add the eggs one at a time, beating well after each addition.
Combine Wet and Dry Ingredients
In a small bowl, mix the milk, lemon juice, and vanilla extract. In a separate bowl, combine the flour, baking powder, and salt.
